Time and money are a definite concern.
Guide services seem expensive, and time consuming - but I have little/no rock/glacier climbing experience or equipment. Toughest highpoint experience for me to date is Boundary Peak.
Preliminary research leads me to believe I should go with a guide on Granite - the training and guide, I believe, would increase success chance, and help prepare me for future adventures. (I would welcome some company to share the experience, defray some of the cost, and to help create a "team" atmosphere...)
Gannet seems to be a very long hike - but not extremely  technical. This is where I would really like to save some money, and perhaps, time.
My thought is to maybe go for this without a guide... perhaps after doing Granite with a guide, and getting some training and experience.I also believe chance of success and quality of experience climbing Gannet would be increased by joining with others - especially those with more experience than I...
I have some solid experience long distance backpacking, as I have been section hiking the Appalachian Trail for seven or eight years. I can carry a load for some miles - and elevation gain. I will adequately prepare and be in GOOD physical condition for the attempts.
I have never backpacked in Grizzly country...
Please let me know if you have any interest in joining me (or allowing me to join you) for a summit attempt(s) -  (with or without a guide)
Please also advise, regardless of your desire to make a summit attempt - I value your knowledge and experience, and would be grateful to have you share it with me.
My very preliminary itinerary (and very dynamic, at this early planning stage) is to attempt to climb Granite before the Konvention, and Gannet after.
I was thinking of flying into and out of Salt Lake City, renting a vehicle there, and climbing Kings as an overnighter and Borah as a day hike. If time permits, I would attempt either or both soon after arrival or just prior to departure from this area of the country. Again, any thoughts on this, or interest in joining me on an attempt, are encouraged.

Granite from the southwest is much less technical than Gannet. It's class three in the couloir on that route. There are guides who can take you up that route as well, but given how close to the convention you will be traveling, you will most likely be able to find a group to go with.

Gannet is much more than just a really long hike. In late July if the snow bridge is down you are looking at a difficult bergschrund crossing as well as a summit day with extensive glacier travel no matter what the conditions are. Guides for Gannet will run you a great deal of money given the length of time required to make the trip.

As to your other list, Kings is more along the lines of a very long hike.
